Porridge

Porridge – the classic but boring breakfast. Not anymore: I tried many porridge variations and found my favorite “Porridge with yeast flakes”. Max hates it since it has quite a savory flavour. His favorite is Porridge with cinnamon and sugar.

You can add any toppings on the basic porridge recipie below.

I use a rice cooker for our porridge – the recipe below also works on the stove but you should really consider buying a multi-purpose rice cooker since it is so useful for so many recipes!

Ingredients

  • 1 cup of oats (I love using the jumbo sized rolled oats)
  • 2 1/2 cups of water (you can use soy milk, coconut milk or almond milk) - I would not recommend using oat milk since it is a bit of a waste but other nut milks can add some nice flavours
  • Sugar (I tend to only add sugar to the finished porridge - Max perfers his sweeter than I do)

Instructions

I just add everything to the rice cooker, select the porridge menu and start 😉

But if you are making it on the stove:

  1. Bring the vegan milk to a boil in a pan
  2. Add the oats and turn down the heat (low-medium) – it should be simmering not bubbling like crazy
  3. Cover the pan and cook for 10-15 min
  4. Stir occasionally to make sure it does not settle on the bottom of the pan
  5. If you think it is getting to thick just add a bit of milk
  6. Once finished add to bowl and add toppings

Notes

Here are some topping ideas: Bananas, berries, apples, nuts, sirup, peanut butter, cocolate powder, cocolate chips, etc., and of course my all time favorite: nutritional yeast flakes!!!! (Caution: the adding of this topping can result it severe addition to nutritional yeast - or nausia according to Max 😉 )
