Vegan Stuffed pineapples

If you want an easy recipie for an extravagent looking dish you are on the right page.

Pinapples are note used enough in savory dishes! They have such a great consistancy and flavour. I thought I would create a really easy recipie that uses pineapple (every part of it)!

Ingredients

  • 2 cups of any white long grain rice
  • 2 large pineapples
  • 1 onion
  • 1 clove of garlic
  • 3 peppers - I would suggest red or green just for the colour boost 🙂
  • 1 teaspoon of spicy jerk paste
  • 1 tablespoon of barbecue sauce
  • 1 cube / 1 tablespoon of veg broth

Instructions

  1. Cook white rice
  2. Cut the 2 pineapples in half – make sure to keep the stems attached (it will look better that way). Remove all of the delicious pineapple meat so only the hollow pineapple shells are left.
  3. Cut up onion, clove of garlic, peppers and the pineapple pieces you just extracted.
  4. Sautee the onions in olive oil, add the garlic and finally the peppers. Let everything  fry a little before adding the pineapple.
  5. Boil some water in your kettel. In a bowl add veg broth, bbq sauce, and the spicy jerk paste. Pour the hot water over and mix thoroughly before adding to the peppers and pineapple.
  6. Once everything is cooked mix the rice with the pepper and pineapple mixture and spoon it into the pineapple halfs! Everyone at the dinner table will be impressed!!!
